نقش مخمر در شراب سازی (به انگلیسی: Yeast in winemaking) مهمترین بخش در تبدیل آب انگور به شراب و شراب‌سازی است. مخمر، قند موجود در آب انگور را به الکل و دی‌اکسید کربن تبدیل می‌کند و هر چه مقدار قند موجود در آب انگور بیشتر باشد، میزان الکل محلول بیشتر می‌شود.ساکارومیسس سرویزیه همان مخمر شراب است که در تهیه آبجو و نان هم استفاده میشود.
در اواسط قرن ۱۹، دانشمند فرانسوی به نام لویی پاستور از طرف دولت فرانسه مسئول تحقیق درباره از بین رفتن (مزه) برخی شراب‌ها شد و همین باعث کشف میکروارگانیسم‌های مخمر توسط او شد و نام او را در صدر فهرست پدران علم میکروبیولوژی قرار داد.

شراب‌گیری:
شراب‌گیری (انگلیسی: Winemaking‎ یا Vinification) فرایند تولید شراب است، که با گلچین کردن انگورها یا دیگر محصولات شروع شده و با بطری‌گیری پایان می‌یابد. اگرچه شراب بیشتر از انگور تولید می‌شود اما می‌تواند از میوه‌ها یا گیاهان دیگر نیز باشد. می‌انگبین شرابی‌ست که با تخمیر عسل و آب ساخته می‌شود.
شراب‌گیری می‌تواند به دو دسته کلی تقسیم شود: تولید شراب ساکن بدون گاز و تولید شراب گاز دار‌.

علم شراب و شرابگیری با عنوان می‌شناسی شناخته می‌شود. شخصی که شراب تولید می‌کند را شراب‌گیر یا وینتنر (به انگلیسی: Vintner) گویند.
